I Couldn't Pass Over Passover :)

Because of passover, I've been cooking a lot this week. We can't eat anything that rises,so no bread, pasta, rice... thanks Pharoh, way to ruin it for all of us.

I'm going to bring the first one, "the Triple Threat Matza Candy Crunch" to Amplify tomorrow. I made up the name and altered this recipe from Zoe Bakes with three toppings (ghiradellibittersweet, white chocolate and milk chocolate). Its a homemade layer of caramel, baked with three types of chocolate melted on top. There are a lot of variations of"Matzo candy" and it's a staple every year.

side note: in these pictures, the Triple Threat isn't done drying and you can see some of the caramel on the sides. It's not exactly the final pretty version but like the Jews fleeting Egpyt who didn't have time for the bread to rise, I knew I had to do this post tonight b/c tomorrow's so busy... even if it's not quite ready for the picture. and these were taken from my phone. they look better in person. i can't stop eating them. bad!
I'm going to post the other recipes later. One is a breakfast, one is a side. Most of these I got from other online blogs (or traditions passed along from my mama). Some of these are really good and I look forward to eating them every year. Juliet and I may do a Passover breakfast cooking lesson on Sat. and blog about it. Let us know if anyone else is interested. :)

Delish Burgers

I shocked myself the other night, stepped outside of the box and made hamburgers. I know I know, its a little depressing that my first post isn't a cupcake recipe, but these were so yummy I felt the need to share. Kirk said he was craving something different that included bacon and since I didn't have a lot of time to spare I decided the bbq would be the best choice. Sooooo, I opened the fridge and saw a package of bacon and ground hamburger meat so I felt like it was a sign (literally they were right next to each other in the fridge). I don't usually cook with measurements so you may want to make adjustments, depending on how much flavor you want. Here is what I did: Ingredients: 1 yellow onion 1 package of bacon 1 lb ground hamburger meat shredded yellow cheese Olive Oil BBQ Sauce Spices of your choice Steps: 1. Saute onions with some spices and garlic olive oil (I used this McCormick grilling sensations mix) 2. Cook the bacon however you like it cooked, as long as it is able to be crumbled 3. Crumble the bacon (i used 3/4 of the package) once its cool. Use the rest of the bacon to put ontop of the bugers once they are cooked 4. In a large bowl combine sauted onions, crumbled bacon, hamburger meat, bbq sauce, and shredded cheese. 5. Once the mixture is really mixed together form into patties and cook either in a frying pan or on the grill. If I wasn't making this for my family, I would have added garlic too but since my dad hates garlic, I left it out. I served the burgers on toasted buns with more cheese, bacon, and bbq sauce on top and it was a huge hit. I think the great thing about these is they are super quick to put together and you can even form the pattys the night before so all you have to do when you get home is throw them on the grill. Sidenote: If the mixture is too mushy to form into patties, just add some bread crumbs. Hope you all enjoy!!!!!!!
